Coconut & banana Biscuits

Appreciated by the barking furry, but also by those who meow, these greedy biscuits are a great reward after a well-executed exercise, or simply for not having turned your house upside down while you were out.

To be given, of course, sparingly, not as a substitute for a meal, but perhaps as a sweet ending.

And they are also good for humans (in this case, I would suggest to add a spoonful of sugar), but our four-legged friends may not let us taste them!


Let's fasten the apron and let's get started!



INGREDIENTS for 25-28 cookies:

100 g rice flour

40 g coconut flour

1 medium-small banana (or half a large banana)

1 large spoonful of honey (I used lavender honey)

1 medium whole egg

1 tablespoon (about 10 g) of olive oil



PROCEEDINGS

Mash the banana well with a fork until it is reduced to a puree:


In a large bowl, pour the flour, honey, oil, whole egg and banana puree:


First mix with a spatula and then knead with your hands, until you get a soft and compact dough:


Wrap it in cling film and let it rest in the fridge for half an hour:


Then, remove the dough from the fridge, divide it into small portions, roll it out with a rolling pin and obtain many biscuits of the most varied shapes:


Bake in a preheated STATIC OVEN at 175 ° C for 18 - 20 minutes, using the central shelf.

The biscuits will be ready when they have taken on a golden color (not brown, please!).

If you manage to leave some Coconut & banana Biscuits, you can keep them in a tightly closed container, for 7 - 10 days.
